Pressed into neat five-gram wafers, this Bai Mu Dan from Fuding captures the essence of early spring in Fujian. The leaves, plucked from the first flush of Fuding Da Hao cultivar, brew with a soft golden hue and a scent like sun-warmed pear skins and wildflowers after rain.
On the palate, it’s gentle and silky—sweet meadow honey, crisp white grape, and a touch of lychee. There’s a delicate fruitiness that lingers, lifted by the clean minerality of Fuding’s loamy mountain soil. Each infusion opens new layers: fresh hay, sugarcane, and the faintest whisper of melon rind.
The liquor is light but supple, with almost no astringency, leaving a lingering coolness on the breath. Whether steeped gong fu, brewed western style, or simply dropped in a mug “grandpa style,” it’s an effortless and refreshing cup—pure spring in a wafer.

    I’ve always thought white teas are some of the best teas for grandpa style brewing. The leaves are forgiving, and the flavor is naturally sweet and fruity, so you can pour hot water over them and keep sipping all day without worrying about bitterness.

    Drop a White Wafer into a tall glass, pour hot water (90–99°C / 194–210°F) over it, and start sipping. The leaves slowly unfurl at the bottom, and you can top up with more water whenever you like. Each refill brings out slightly different flavors, so the cup evolves as you go.
