I’ve always thought white teas are some of the best teas for grandpa style brewing. The leaves are forgiving, and the flavor is naturally sweet and fruity, so you can pour hot water over them and keep sipping all day without worrying about bitterness.
Drop a White Wafer into a tall glass, pour hot water (90–99°C / 194–210°F) over it, and start sipping. The leaves slowly unfurl at the bottom, and you can top up with more water whenever you like. Each refill brings out slightly different flavors, so the cup evolves as you go.
